The bright orange apricots you see in shops are sulphur-treated to keep the colour. These aren't. Brown is what a dried apricot actually looks like.

Dense, chewy and intensely sweet, with a slight tartness underneath. The kernel inside the stone is edible too and gets pressed for oil.

Said plainly: these look less pretty than commercial dried apricots and taste considerably better.

A room that has never been empty.

Kothar is named after a room in Sungri Heights, Shimla. Our founder Amit Palsra's grandparents have kept it full for over forty years — his grandmother still fills it every summer.

Everything on this shelf comes from that habit: growing, drying and storing what the season gives, and sending on whatever there's enough of.
