Ghee is the most confidently mislabelled product in Indian retail. Everything is 'pure', everything is 'desi', and a lot of it is neither. Here is what the words actually mean and how to check what you have got.

What bilona actually means

Bilona refers to the traditional method: milk is set into curd, the curd is churned to produce butter, and the butter is then simmered into ghee. The churning happens at the curd stage, which is the whole point.

The industrial method skips this. Cream is separated from milk directly and boiled into ghee. It is faster, cheaper, and gives a smoother, more uniform product — but it is a different process producing a different thing.

Neither is dangerous or fake. But only one of them is bilona, and only one justifies the price difference.

Why hill ghee tastes different

Two reasons, and the second matters more than people think.

First, what the cows eat. Cattle grazing on hill grass and mixed forage produce milk with a different fat profile from cattle on uniform commercial feed.

Second, batch size. Village ghee is made in a home kitchen in small quantities, and small batches are simply harder to make consistent — which is why real hill ghee varies slightly between batches, and industrial ghee never does.

Why it is grainy — and why that is good

People sometimes think granular ghee has gone wrong. It has not.

Graininess comes from how the fat crystallises as it cools, and slow cooling in small quantities tends to produce it. A perfectly smooth, uniform texture usually indicates industrial processing and controlled cooling.

Similarly, real ghee changes with the season — firmer in winter, looser in summer. Ghee that stays identical all year has usually been standardised.

Four honest ways to check your ghee

  1. The melt test. Take a spoonful and let it melt on your palm from body heat alone. Real ghee melts readily. Ghee cut with vegetable fat resists.
  2. The smell test. Real ghee smells strongly and specifically — you should notice it across the room when it hits a hot pan. Weak smell usually means blending.
  3. The pan test. Heat a little. It should melt clear and golden fairly quickly. If it goes cloudy or leaves a residue, something else is in there.
  4. The winter test. Leave it out in cold weather. Real ghee sets firm and grainy. Uniformly soft ghee in January is suspect.

None of these are laboratory-grade, but together they will catch most of what is wrong in the market.

Storing it

Ghee does not need refrigeration. Kept in a sealed container away from light and water, it holds for about a year at room temperature.

The only real enemy is moisture — always use a dry spoon. A wet spoon introduces water, and water is what makes ghee spoil.
